Muscadet ‘sur lie’ is a big step up from basic Muscadet. The young wine (made from the Melon de Bourgogne grape) is left in contact with the yeast lees following fermentation in stainless steel tanks, and picks up an extra dimension of savoury richness.It’s bottled in the spring, and should still have a prickle of fizz from the gas produced during fermentation. This is from the largest of the Muscadet areas, Sèvre-et-Maine. It has creamy, tangy aromas, lively acidity, lovely ripeness and creamy depth.
