Flavour

Thanks to its high tannin content, the Cabernet Sauvignon grape makes for beautifully aged wines with intense, deep flavours ranging from wild dark fruits to woody cedar and oak, and even mint and eucalyptus. Some Cabernet Sauvignon wines even produce notes of green pepper and grassy herbs. This flavour is produced by pyrazines in unripened grapes.
 

Best Pairings

Cabernet Sauvignon pairs wonderfully with rich, roast and grilled meat dishes including game, lamb, steak, beef and venison. Cabernet Sauvignon is also choice wine for tomato sauces but also a surprisingly good match for some rich, creamy sauce dishes too – try with a mushroom stroganoff or Portobello mushrooms with Gorgonzola sauce.
